Deal of the Week – Sourdough Pizza
Every so often, followers of Chengdu-Expat, receive a special deal on a great product or service in Chengdu, for one week only. This week, Uncle Z’s Pizza are offering up to 30% on their sourdough pizzas.
Who is Uncle Z?
Uncle Z (the Z stands for Zoltan) has over 20 years of experience in Bakeries back in Hungary, working as the pizza chef at the award-winning Don Pepe pizzeria, which is where he discovered his love of Italian cuisine.

Whilst Chengdu has some great pizzas already, Uncle Z noticed no one was using one of the most delicious ways to ferment dough; using a sourdough starter.
What is sourdough?
Sourdough makes for crispy, melt in the mouth pizza crusts, which come from ancient methods of dough making
Lactobacilli is used to make a mother sourdough mix. It has to be kept alive by feeding it with flour and water twice a day as it’s a living organism. The mother mix is used to create the pizza dough, which then goes through 24 to 48 hours of fermentation depending on weather.
Uncle Z’s Carbonara Pizza: Carbonara base, pancetta, egg, parsley.
Normal pizza with ordinary yeast is much faster, but Uncle Z knows that quality takes time. His mother mix is 5 months old already, but in some places in Italy, some are as old as 110 years.
The Gardener: Basil infused tomato sauce with mozzerella, zucchini, broccoli, 3 types of bell pepper, red onion, mushrooms, and black olives.
The flour, salami, pancetta, and tomatoes are exported from the same region as the Napolitana pizza’s birth place, and the other ingredients are bought fresh every day.

Their sauce is home made with fresh Italian basil leaves and San marzano tomatoes. All ingredients are approved by Associazone Verace Pizza Napoletana
Uncle Zs also do authentic Italian pasta, salads, and sides. Sides include fried wings, nuggets, popcorn chicken, tempura shrimp. If you really want to treat yourself, try the loaded fries; bolognese, cheese sauce and bacon, or shrimp.
